Ceasar salad dressing

1 large garlic clove
1 tsp kosher or sea salt
1 anchovy
1/2 large lemon (Meyer if in season)
3 tbsp olive oil (guesstimate)

Directions
1. Combine garlic and salt in mortar and pestle. Grind to paste.
2. Add anchovy. Grind to paste.
3. Add lemon and olive oil and blend.
4. Add more of any above ingredients to taste.

Pork belly sandwich on white w/mint, cucumber and chile aioli

Delicious balance of fatty pork belly a fresh cucumber and mint.

Also tried BBQ pork sandwich, which has become my favorite pulled pork sandwich to date. Smokey deliciousness!

A good food day at chez Thomas

A few fun food things to note about today. Tonight we enjoyed the first tomatoes of the season from our garden. We made a simple bruschetta and it was really tasty. There are few things as good as home grown tomatoes. I’m really hoping the weather cooperates and we can have more of the same before summer is over. And earlier today, we gave Theo his first solid food; avocado. He seemed to like it and did pretty well. We’ll let him try more again tomorrow. I think his second food with be either bananas or sweet potatoes. We have both ready for him. Of course we documented both of these monumental events… pictures to follow.

Rotisserie pork roast

Recipe:

  • Pork Shoulder 4-5lb
  • Sage
  • Rosemary
  • Garlic (1.5-2 cloves per pound)
  • Lemon juice
  • Olive Oil
  • Cracked Pepper
  • Kosher Salt

Directions:

  1. Trim excess fat from pork shoulder. Don’t trim all fat.
  2. Tie up pork with kitchen twine.
  3. Squeeze juice of one lemon into bowl.
  4. Pour lemon juice on pork and massage in.
  5. Finely chop rosemary and sage.
  6. Press garlic into bowl, add chopped rosemary, sage, olive oil and pepper. Mix.
  7. Coat pork with generous amount of kosher salt.
  8. Spread garlic and herb mix onto pork.
  9. Add pork to rotisserie and cook below 400 for 1.5 hours.

Notes:

  • Keep grill at low temperature, at least below 400. Higher and the fat drippings will ignite and burn the roast.
  • 5lb took 1.5 hours

6th Wedding Anniversary

Progressive dining for the evening. Our favorite way to eat.

Spur Gastropub for cocktails and small bites.

  • Cliff tries first Gin martini (loves it, has another)!
  • Becca goes for champagne cocktail. A classic standby for her.
  • Bartender is extra friendly and lets Cliff try samples of two new Bourbons.
  • Sockeye Salmon Crostini: mascarpone. caper. pickled shallot.
  • Buffalo Chicken Confit ‘Wangs’ w/blue cheese. celery. (basically fancy chicken wings, but tastier)

Tavolata (Ethan Stowell restaurant) for apps

  • Peroni – Cliff
  • Spritz cocktail: Aperol, Prosecco, Soda – Becca (very bland)
  • Bruschetta: Smoked Mackerel, Aioli (smoky and delicious)

  • Grilled Baby Octopus: Cauliflower, Golden Raisin, Pine Nut (Cliff loves octopus and this one didn’t let him down. Charred to perfection and very tender. Plus the pickled cauliflower was pretty darn tasty.)

Zoe for dinner

  • Black Maple Hill Rye (tasty, as always, but not worth $38, give me a break)
  • Pinot noir, ’07 joseph drouhin “véro” – Becca (Delightful for a pinot noir)
  • Sangiovese, ’08 luiano “rosso toscana” – Cliff (went well with dinner only, on it’s own was too much of a dry sangiovese)
  • Heirloom tomatoes quinoa, nicoise olives, cucumbers, peaches
  • Confit lamb heart preserved lemon yogurt, heirloom beans, harissa, mint (Cliff just had to try! Good, but tasted irony like you’d imagine.)
  • Braised morels semolina gnocchi, beef tongue, wilted greens, mascarpone (Did you say beef tongue? Yep, tasted like moist pot roast. Becca even liked it.)
  • Dark chocolate mousse bar- raspberry, milk chocolate caramel, blackberry coulis (Delicious, but would have been amazing with a little Flor de sal sprinkled on top.)

Another wonderful anniversary dining adventure. We were let down at Zoe, as our favorite bartender wasn’t working, and new bartender wasn’t as forthcoming with free apps, tastes and extra pours of wine.

  • yogurt (boring maybe, but I eat it every day and love it in all it’s forms – tzatziki, frozen, plain, flavored, you name it!)

Special mention: cheese. It’s hard to say it’s not in my top five. I’m fairly convinced that heaven has lots of cheese to enjoy with the wine and french bread
